Montalto Late Harvest Sauvignon Blanc paired with Cuveé Bianco. The unmistakable sauvignon blanc aromas of passionfruit and lychee combine with mixed peel and marzipan, together with some faint grassy notes. Perfectly layered, there is an immense concentration of fruit, with spicy warmth and fresh, natural acidity.
Cuveé 30% is a white chocolate that proudly tells the tale of full cream milk married to a vanilla bean extraordinaire. It’s this ever-powerful presence of Tongan bourbon vanilla that makes the Bianco a white chocolate experience like no other.
Montalto Pennon Hill Chardonnay paired with Cuvée Soleo. This delicious Chardonnay exhibits great varietal definition and regional expression. Lemon and Lime sherbet, white peach, chalk and slate, apple blossom, together with some roasted almonds and hazelnuts. There’s some brioche and gentle oak aromas just to round out the package. A collage of citrus and stone fruit flavours are supported by quenching acidity, together with a mineral lick and generous texture from the lees work.
42% Milk Chocolate 70g block. Soleo impresses with an unparalleled level of smoothness, strong hints of caramel and an ever so slight nuttiness.
Montalto Pennon Hill Rosé paired with Cuvée Bianco White chocolate 70g block. This Rosé is made from selected parcels of fruit and specific vinification techniques using 100% pinot noir. The Cuveée 30% is a white chocolate that proudly tells the tale of full cream milk married to a vanilla bean extraordinaire. Montalto Pennon Hill Pinot Noir paired with Cuvée Blanc de Caramel or Cuvée Amphora “Red currants, blueberry, sour cherry, cranberry and dried strawberry combine with florals, dried herbs, spice, and earthy forest-floor qualities. On the palate, generous juicy red fruits meld with bramble and earth. The inclusion of whole bunch is evident with intense aromatics and a long savoury drive notable. French oak plays a lovely supportive role adding to the structure and flavour profile by way of mocha notes. An approachable Pinot Noir with excellent varietal and regional expression.”
Blanc de Caramel 42% Caramelised Chocolate (with Sea Salt) 70g block. Australian milk, caramelised painstakingly by hand, creating a caramel ever so delicate and subtle. Paired with a hint of sea salt and you have the recipe to what we could only describe as effortless.
Amphora 65% Dark Chocolate 70g block. Strong impressions of red and tropical fruit in the front palate, followed by complex layers of natural acidity which make it appear considerably less sweet than a common 65% dark chocolate.
Montalto Pennon Hill Shiraz paired with Cuvée Grand Cru A Shiraz with a complex array of fragrances; plum, mulberry, raspberry, liquorice, black olives, pepper, nutmeg and cloves all mingle effortlessly together. There’s some gentle whole bunch fragrance adding to the complexity. Juicy fruit flavours merge with meaty and spicy notes and are well supported by gentle French oak, ripe silken tannins and lively fresh acidity to finish.
Grand Cru 75% Dark Chocolate 70g block. With lots of cherry and red plum breaking through the slight bitterness of the cocoa, finished by a hint of acidity in the back palate, it’s perfect for the chocoholic preferring less sweetness and more cocoa.
